Christmas Marmalade from Galloway Lodge
Galloway Lodge Preserves cooks each small batch of their fine marmalades very slowly over an open flame to allow the fruits to caramelize with the sugar for a rich home-made taste. This Christmas Marmalade is made with mandarin orange, ginger and cane sugar. Some say marmalade was created by her French chefs to cure Mary Queen of Scots’ cold (Marie’s Malade), while those from Dundee claim their ancestors made it when a Spanish galleon sunk offshore spilling its cargo of Seville oranges on the beach.
